درباره عسل عسل مایعی است شیرین و غلیظ. زنبور عسل با خرطوم مخصوص خود شهد گل ها را میمکد و در عسلدان خود ذخیره می کند و با افزودن آنزیم آنرا تغلیظ و تغییر شکل داده و به عسل طبیعی تبدیل می کند. سپس به وسیله خرطوم خود آن را در سلول های مومی کندو تخلیه و ذخیره می کند و پس از پر شدن تمام سلول های مومی کندو، عسل توسط زنبوردار از داخل کندو در فصل مشخص به میزان معین و به روش خاص خود برداشت می شود. در آیات و روایات قرآن کریم و سایر کتب آسمانی نیز به این هدیه ارزنده اشاراتی شده و از گذشته های دور مورد توجه اکثر بزرگان بوده است. ویژگی های عسل طبیعی ساده ترین راه برای مصرف کننده این است که با چشم خود، شکل ظاهری عسل را ارزیابی و با زبان آن را مزه مزه نماید. اگر مجموعه خصوصیات آن باب طبعش بود و طعم خاص عسل را داشت ارزش آن را دارد که بهای آنرا در حد معمول بپردازد و جهت اطمینان بیشتر از کیفیت عسل بهتر است در آزمایشگاه کنترل کیفیت به تایید نهایی برسد. عسل طبیعی فاقد هر گونه افزودنی است و باید آنرا از افراد مطمئن و در بسته بندی های بهداشتی و معتبر تهیه کرد.
